Cheesy herb, garlic and parmesan keto bread

One of the things you start to miss on Keto is bread. I don’t think I used to eat that much bread but as soon as it was no longer in my diet, I craved it.

Thankfully, there is a lot of great Keto bread substitute recipes on the internet, from fat head dough to chicken mince bread, you can find a great tasting substitute for any application; believe me, I’ve tried them all!

But then I started to experiment with my own versions and created this Cheesy Herb, Garlic and Parmesan Keto bread. This is a super simple recipe for anyone with a craving for a savoury treat. Perfect hot or cold as a snack or side dish. High in fat and less than 2g of carbs per serving and best of all, it only takes about 10 minutes prep time! It reminds me of savoury muffins you would find at your local coffee store like Starbucks.

The main ingredient for this recipe is almond flour, if you have never used this before you will mostly find it at your local supermarket, sometimes at a health food store or just get some on Amazon.

Cheesy Herb and Garlic Parmesan Keto Bread

Ingredients

  • 120 g Almond flour (about 1 and 1/2 cups)
  • 2 whole Eggs
  • 75 g Sour cream (about 1/3 cup)
  • 40 g Butter (melted then cooled)
  • 90 g Cheddar cheese (about 1 cup)
  • 40 g Parmesan cheese grated (about 1/4 cup)
  • 1 tbsp Baking soda
  • Herb of your choice – Thyme/Rosemary/Oregano and Garlic powder

Instructions

  1. Set oven to 150°C (300°F) and grease your loaf pan. Tip, use baking paper so you can easily slide the loaf out when it is cooked. 

  2. Mix all the dry ingredients in a large mixing bowl. Almond flour, baking soda, herbs and garlic powder. Use a whisk to mix the ingredients and to help get out any lumps. 

  3. Now, in a separate bowl, put in your two eggs and beat them with the whisk for 30 seconds. Then add in the sour cream and melted butter and once again mix it all together.

  4. Next, pour your egg mixture into the centre of the dry ingredients and using a wooden spoon mix everything together. 

  5. Lastly, mix in your cheeses. At this point, you could also add in some other ingredients like cooked bacon! 

  6. Transfer the mix into the loaf pan. If you want some flavour on top, add a sprinkle of parmesan or sesame seeds. Put in the oven for 50 minutes. 

Recipe Notes

Once you have taken it out of the oven, be sure to let it cool before cutting into it (if you can resist!). For best results, leave in the fridge overnight. 

 

Note: This is a crumbly bread. Best heated up in the microwave or just eaten at room temperature. I would not recommend using it in a toaster.
